1. Simple Egg Hakka Noodles:
Made with instant noodles, this one infuses scrambled eggs in it. Make sure you add soy sauce and chili sauce in generous amounts for an authentic Chinese test.
Ingredients:
- Hakka Noodles – 2 cups
- Eggs – 3
- Dark soy sauce – 1 tsp
- Green chili sauce – 1 tsp
- Garlic – 5 cloves, finely chopped
- White pepper powder – 1 tsp, freshly ground
- Cooking oil – 3 tbsp, divided
- Salt – to taste
Directions:
- Boil enough water to submerge the noodles completely.
- Add noodles and 1 tsp cooking oil to boiling water and cook al dente. Rinse under cold water, drain, and keep aside.
- In a shallow frying pan kept on medium to high flame, heat rest of the cooking oil.
- Add chopped garlic and sauté until it becomes golden.
- Crack eggs into the mixture, add salt and pepper, and scramble.
- Mix in the drained noodles and sauces and toss to ensure even blending of flavors.
- Adjust seasoning.
- Remove from heat and serve hot along with chili vinegar and ketchup.
