2. Veggie Egg Hakka Noodles:
This simple delicacy can easily be included into a lazy day as a complete meal option. Use the noodles of your choice, if you do not get the hakka noodles.
Ingredients:
- Hakka noodles – 2 cups
- Eggs – 3
- Mixed veggies – 1 cup [cabbage, carrots, capsicum]
- Onion – ½ cup, finely sliced
- Garlic – 5 cloves, peeled, crushed
- Soy sauce – 1 ½ tsp
- Vinegar – ½ tsp
- White pepper powder – 1 tsp
- Butter – 2 tbsp
- Cooking oil – 1 tsp
- Salt – to taste
Directions:
- Boil water in a large saucepan to keep the noodles submerged.
- Add noodles along with 1 tsp oil to boiling water and cook al dente. Rinse with cold water, drain thoroughly, and keep aside.
- In a shallow frying pan placed on medium to high flame, melt butter.
- Add crushed garlic and sauté until it becomes golden.
- Add onions and sauté until translucent.
- Add veggies and sauté until crisp tender.
- Crack in eggs and scramble.
- Add seasoning and sauces and mix to ensure even spread of flavors.
- Add noodles, vinegar, and toss for even coating.
- Adjust seasoning.
- Remove from heat and serve hot alongside the ketchup.
