2. Veggie Egg Hakka Noodles:

This simple delicacy can easily be included into a lazy day as a complete meal option. Use the noodles of your choice, if you do not get the hakka noodles.

Ingredients:

  • Hakka noodles – 2 cups
  • Eggs – 3
  • Mixed veggies – 1 cup [cabbage, carrots, capsicum]
  • Onion – ½ cup, finely sliced
  • Garlic – 5 cloves, peeled, crushed
  • Soy sauce – 1 ½ tsp
  • Vinegar – ½ tsp
  • White pepper powder – 1 tsp
  • Butter – 2 tbsp
  • Cooking oil – 1 tsp
  • Salt – to taste

Directions:

  1. Boil water in a large saucepan to keep the noodles submerged.
  2. Add noodles along with 1 tsp oil to boiling water and cook al dente. Rinse with cold water, drain thoroughly, and keep aside.
  3. In a shallow frying pan placed on medium to high flame, melt butter.
  4. Add crushed garlic and sauté until it becomes golden.
  5. Add onions and sauté until translucent.
  6. Add veggies and sauté until crisp tender.
  7. Crack in eggs and scramble.
  8. Add seasoning and sauces and mix to ensure even spread of flavors.
  9. Add noodles, vinegar, and toss for even coating.
  10. Adjust seasoning.
  11. Remove from heat and serve hot alongside the ketchup.
