5. Prawn Egg Hakka Noodles:

This is a low fat recipe and can easily be converted into a fabulous dinner. Serve it along with a spicy soup and a crunchy salad for a complete meal option.

Ingredients:

  • Egg Hakka noodles – 2 cups, cooked al dente, drained and kept aside
  • Sesame oil – 1 ½ tbsp
  • Ginger – 1 1-inch piece, finely grated
  • Red chilies – 2, finely chopped
  • Eggs – 2, beaten
  • Prawns – 1 cup, peeled, cooked
  • Soy sauce – 1 tbsp
  • Coriander – 2 tbsp, finely chopped
  • Mint – 2 tbsp, finely chopped
  • Lemon juice – 1 tbsp, freshly squeezed
  • Salt – to taste
  • Peanuts – 2 tbsp, roasted, chopped

Directions:

  1. Place a large frying pan on medium to high flame and heat oil.
  2. Add eggs to the pan and swirl and cook like an omelet.
  3. Transfer to a plate and cut into thin strips.
  4. In the same pan, sauté ginger and red chillies.
  5. Add noodles, cooked prawns, and egg slices.
  6. Sprinkle the soy sauce and salt to taste.
  7. Mix in the herbs and and toss well.
  8. Add peanuts and toss.
  9. Serve fresh along with chilli vinegar.
