3. Egg Hakka Noodle Soup:
If your tummy is craving for something tasty, yet light, then this one could be your choice. A great snack option, it is adored by kids and adults alike. And, it is the best way to warm up your cold winter!
Ingredients:
- Egg hakka noodles – ¼ cup
- Mix veggies – ½ cup, finely chopped [Carrots, bell pepper, sweet corn]
- Chili vinegar – 2 tbsp
- Cornstarch – 2 tsp
- Oil – 1 tsp
- White pepper powder – to taste
- Salt – to taste
- Parsley – 2 sprigs, for garnishing
- Eggs – 2, hard boiled, peeled, thinly sliced
Directions:
- Boil 1 cup of water. Add noodles along with 1 tsp oil to the water and cook al dente. Drain and keep aside.
- Add about 1 cup of water in a large saucepan, add veggies, and allow them to cook until crisp and tender.
- Dissolve cornstarch in ¼ cup water and keep aside.
- Add noodles and egg slices and mix in seasoning.
- Mix in cornstarch and allow the mixture to thicken.
- Adjust seasoning and mix in half the vinegar.
- Turn off the heat, spoon into soup bowls, and serve hot with a crusty bread of your choice.
Tips: You can use deep fried eggs also in this soup. Here is how you can deep dry the egg slices.
Ingredients:
- Eggs – 2, hard boiled, peeled, sliced
- Eggs – 1, beaten well.
- Breadcrumbs – ½ cup
- Salt – to taste
- Paprika – to taste
- Cooking oil – for deep frying
Directions:
- Dip the egg slices in the beaten egg mix one at a time.
- Then roll it in the bread crumbs seasoned with salt and paprika.
- Meanwhile, heat oil in a deep frying pan until it starts smoking.
- Add egg slices, 3 to 4 at a time and deep fry until golden brown.
- Drain and transfer to a napkin to remove excess oil, if any.
- You can add these slices to the soup just before serving.
